It’s that time of year again, the nights are getting longer, it’s not quite as warm as we’d like and well if you live in England it’s getting grey again. I mean don’t get me wrong I love Autumn. And yes I’m a little bit basic and I’m looking forward to enjoying pumpkin spice lattes again. There is something amazing about finally being able to control your body temperature again. But before I jump on the Hygge bandwagon I think we still have time to enjoy some rum cocktails.

Rum is having one hell of a rival this year. There is no denying it, rum and not just tiki cocktails are more popular than ever. Even though summer is heading off into the sunset, we think these 5 Rum Cocktails can still be enjoyed.

Skullduggery

Skullduggery Cocktail Recipe

Ingredients
  • 45ml of Dark Rum
  • 7.5ml of Overproof Rum
  • 90ml of Pineapple Juice
  • 30ml of Coconut Puree
  • 30ml of Passionfruit Puree
  • Cinnamon Stick and an Orange Peel Skull for garnish
Method
  1. Add all of the ingredients to a cocktail shaker filled with ice
  2. Shake well to combine
  3. Strain into a glass filled with crushed ice
  4. Garnish with a cinnamon stick and orange peel skull

 

Foul Weather Friend

Foul Weather Friend Cocktail Recipe

Ingredients
  • 45ml of White Rum
  • 15ml of Navy Strength Jamaican Rum (we recommend Smith & Cross Rum)
  • 22ml of Licor 43
  • 15ml of Campari
  • 30ml of Lemon Juice
  • 15ml of Orange Juice
  • 7.5ml of Passionfruit Syrup
Method
  1. Add all of the ingredients to a mixing glass filled with crushed ice
  2. Gently stir to combine
  3. Pour the cocktail (including the ice) into a glass
  4. Garnish with fresh mint and a cocktail umbrella
Cucumber Aku Aku

Cucumber Aku Aku Cocktail Recipe

Ingredients
  • 60ml of White Rum
  • 15ml of Peach Liqueur
  • 30ml of Lime Juice
  • 15ml of Simple Syrup
  • 4 Small Chunks of Pineapple
  • 4 Cucumber Slices
  • A handful of mint leaves
  • Pineapple Leaves and Cucumber slices for garnish
Method
  1. Add the mint, cucumber, pineapple and simple syrup to a cocktail shaker
  2. Muddle the ingredients together
  3. Add the rest of the ingredients and ice to the cocktail shaker
  4. Shake until cold
  5. Fine strain into a glass filled with crushed ice
  6. Garnish with cucumber slices and the pineapple leaves
The Vanilla Trade

Ingredients
  • 30ml of White Rum
  • 30ml of Guatemalan rum
  • 22ml of Lime Juice
  • 15ml of Licor 43
  • 7.5ml of Banana Liqueur
  • 1/4 tsp of Vanilla Extract
  • A Spritz of Mezcal using an Atomizer or Martini Mister 
  • A Wedge of Lime and Vanilla Pod for garnish
Method
  1. Add all of the ingredients (except the mezcal) to a cocktail shaker filled with ice
  2. Shake until cold
  3. Strain into a glass filled with crushed ice
  4. Finish off by spraying the glass with a spritz of mezcal and garnish with a lime wedge and vanilla pod
About Figgin’ Thyme

Ingredients
  • 45ml of White Rum
  • 7.5ml of Apricot Liqueur
  • 7.5ml of Allspice Dram
  • 30ml of Thyme Simple Syrup
  • 25ml of Lemon Juice
  • 2 Ripe Figs Quartered
Method
  1. Add one and a half figs and the thyme simple syrup to a cocktail shaker and muddle together
  2. Add ice to the cocktail shaker
  3. Pour in the rum, apricot liqueur, allspice dram and lemon juice
  4. Shake until the cocktail shaker is cool to the touch
  5. Double strain into a glass filled with crushed ice
  6. Garnish with the remaining fig quarters
