5 Pimms Cocktails perfect for Summer Drinking

Everyone loves the classic Pimms Cup Cocktail, I mean it is the perfect summer cocktail! Full of fresh ingredients and flavours, the Pimms Cup can’t get any better right? Well Here are 5 riffs on the classic cocktail that are sure to make any BBQ or party better!

Rustic Pimm’s Cup


Rustic Pimms Cup

This Pimm’s riff is a cool blend of the Pimms Cup and a Shandy.

  • 60ml of Pimms No.1
  • 15ml of Lemon & Lime Juice
  • 7.5ml of Cucumber Syrup
  • Splash of Soda Water
  • 60ml of Ginger Ale
  • 60ml of Wheat Beer
  • Cucumber and Lemon for garnish
  1. Add the Pimms, fruit juices, cucumber syrup and soda water into a glass
  2. Top up with crushed ice
  3. Add in the ginger ale and wheat beer
  4. Garnish with cucumber and lemon

To make a homemade cucumber syrup, blend together a cucumber and 100g of sugar. Strain and keep chilled.

Pimm and Proper

Pimms and Proper

With hints of elderflower, rose and cucumber, this cocktail is like drinking a summer garden!

  • 45ml of Pimms No.1
  • 7.5ml of St Germain or Elderflower Liqueur
  • Quarter of a Cucumber
  • 30ml of Lemon Juice
  • 30ml of Rose Syrup
  • 60ml of Soda Water
  • Dried Rose Buds for garnish
  1. Slice the cucumber and add to the bottom of a cocktail shaker
  2. Muddle the cucumber
  3. Add the Pimms, St Germain, lemon juice, rose syrup, and some ice to the cocktail shaker
  4. Shake until the cocktail shaker is cool to the touch
  5. Fine strain into a glass
  6. Dried rose buds

For and alternative garnish, make slices of cucumber using a vegetable peeler

Cloudy Berry Pimms

Cloudy Berry Pimms

Like a classic Pimms Cup, this cocktail uses different summer berries and has extra gin!

  • 50ml Pimms No.1
  • 25ml Gin
  • 15ml Blueberry & Blackcurrant Simple Syrup
  • 50ml of Cloudy Lemonade
  • 25ml of Cranberry Juice
  • Fresh Summer Berries for Garnish
  1. Muddle fresh summer berries in the bottom of a cocktail shaker
  2. Add the rest of the ingredients to the cocktail shaker, and add ice
  3. Shake until the cocktail shaker is cool to the touch
  4. Strain into a glass filled with ice
  5. Garnish with fresh berries and maybe even a spring of mint

We recommend using fresh strawberries, blueberries and blackberries for the fresh fruit

Pimms Iced Tea

Pimms Iced Tea

What better way to enjoy Pimms, then combining it with chilled tea for the perfect summers iced tea!

  • 4 Tea Bags
  • Handful of Mint Sprigs
  • 100g Sugar
  • 100ml of Orange Juice
  • 25ml of Lemon Juice
  • 400ml Pimms
  • Strawberries, Orange Slices & Lemons Slices for garnish
  1. Put the tea bags and mint into a large serving jug, and add 1.5 litres of boiling water.
  2. Leave the tea and mint to infuse for 10 minutes
  3. Once the tea has infused, remove the tea bags and mint and stir in the sugar
  4. Leave the tea to cool, to chill it quicker you can place it in the fridge
  5. Once cool add the orange juice, lemon juice and Pimms, and chill
  6. Serve the iced tea over ice
  7. Garnish with slices of orange and lemon, plenty of fresh strawberries and mint sprigs

We used regular black tea bags in this recipe but you can use green tea instead. You can also reduce the amount of sugar if you don’t want it to be too sweet.

Pimm’s Spritz

Pimms Spritz

This cocktail combines a Pimms cup and the Venetian Spritz to create a light aperitif drink. Perfect for enjoying before a summer’s meal.

  • 60ml Prosecco
  • 60ml Pimms No. 1
  • 60ml Lemonade
  1. Pour all the ingredients into an ice-filled glass
  2. Stir to combine
  3. Garnish with a slice of orange and a sprig of mint
