Layer

Glossary of Terms

To layer, or layering, is a technique used by mixologists to create a cocktail or shot which has two or more layers. This is known as a layered drink, stacked drink or pousse-café and is created by using liquids with different densities and colours to produce a visually striking drink. Liqueurs with the most dissolved sugar and least alcohol are the densest and are put at the bottom, while those with less water and more alcohol are floated on top. The most common way to create a layered drink is to use a twisted mixing spoon and pour from the bottle using a pourer straight into the glass.
