The Clover Club: A Fresh & Fruity Springtime Classic

As the days get longer and the chill of the very long winter fades, it’s time to swap out those heavy, spirit-forward, boozy cocktails for something bright, fresh, and packed with flavour. Enter the Clover Club. It's actually a pre-Prohibition classic that feels tailor-made for spring. Traditionally made with gin, raspberry syrup, lemon, and egg white to create the silky foam on top, it’s the perfect balance of tart, sweet, and botanical.

But here’s the twist. At Drinkstuff, we’re keeping things vegan-friendly and egg-free by swapping out the usual egg white for Stillabunt Magic Velvet Foamers. These clever little drops create that luxurious, frothy texture without any of the fuss, making this cocktail not only delicious but also super accessible. We're also showcasing a brand new Puree brand to us, Boiron.

So, whether you’re sipping in the garden at home, shaking up drinks for friends, or trying to make a few extra pounds for your Bar, the Clover Club is a guaranteed showstopper for the season!

Our Clover Club recipe

• 50ml Juniper forward London Dry Gin
• 20ml Borion Raspberry Puree
• 25ml ODK Lemon Juice
• 10-15ml Monin Cane Sugar syrup
• 6 drops Stillabunt Magic Velvet Foamers

A word about Boiron

As mentioned, Boiron is new to us here at Drinkstuff. And the Ambient is a relaunch into the UK. However, chefs will have known Boiron for a very long time. In fact in European Dessert Kitchens, its pretty much the go to brand to create all kinds of tasty treats. Since inception back in 1970 Boiron has been a Frozen Puree. (note the family fruit business, stems back further to 1942). Boiron has dabbled with Ambient, but never really made waves. Until now. In 2025 and beyond, their 100% Fruit purees (not many, if any other brands can claim that) are ready to take the bar scene by storm!

Why are we showcasing a Puree in this recipe and not a syrup?

Well we believe everyone's palates are different. Everyone wants a different amount of sweetness. By using a Syrup, if you don't want it to sweet, you're sacrificing the amount of Raspberry flavour you get in the cocktail.

However, by using a Puree, you can now get plenty of Raspberry ooomph in the Cocktail, but importantly, regulate the amount of sweetness.
