Cold Foams

Have you heard of them? Have you experienced one yet on a Drink you've ordered?

If not, brace yourselves, as they're going to hit in 2025!

I'll be honest, I'd forgotten all about them until a recent Monin Trends seminar where they were predicting Cold Foam as a big trend for 2025.

To clarify, I only knew about them because of Monin, but we have to go back to March 2024 where we last chatted about them. You have to remember, the likes of Monin are working with Coffee Shops and Bar Chains on their Menus, in some cases, 12-15 months in advance. So back in March 2024, for the trend to fully hit, you're looking at Spring 2025!

So what is a Cold Foam?

Simply put, it's Ice Cold Skimmed Milk whipped up into a stiff foam and then poured on top of Coffees, Coolers, Frappes and Cocktails!

 

Why Skimmed Milk?

Skimmed Milk has more proteins than Full Fat Milk. Which means it can whip up easily into a lighter, foamier version of Whipped Cream. I know it sounds the opposite to what you'd expect. Even I didn't believe it until I tried it with Full Fat milk and then Skimmed Milk. It just didn't work as well!

Honestly, cold Skimmed Milk really does make the best and most stable foam, that'll last for quite a while on your drinks!

 

How do you make a Cold Foam?

Simply add cold Skimmed Milk to a jug and blend it. However, you do need a special Whipper attachment for your blender. And ideally a handheld Blender. The Whipper attachment is a flat disc about 3cm in Diameter. 20-30 seconds and you'll have an incredible stiff Cold Foam. Note, you can't use a Milkshake blender unless you have the larger disc attachment, and a traditional blender that chops food won't work either.

Cold Foam uses

As mentioned above, Cold Foams can be great on all kinds of Drinks. There really isn't a limit. Even Coffees (think Irish Coffees too!) and Hot Chocolates. Afterall, you'd put cream on them, wouldn't you? But they will also crossover onto your Coolers, Frappes and even some Cocktails. I really want to get creative with my creamy Christmas Cocktails. I'm thinking Advocaat Martinis with a twist...

 

How to pimp up your Cold Foam

Now this is where it gets interesting, as Cold Foam is great. BUT the real fun is with flavoured Cold Foams.

Step forward our Frona Powders.

Frona has 20 different Powders, 18 of which are Fruit & Sugar which are ideal for your Cold Foams. That said, I might try out a Chilli Salt Powder Cold Foam one of these days!

All's you need to do, is add 1-2 Teaspoons of your desired Fruit Sugar Powder to your Milk and whip it up! It really is that simple. The end result will not only add colour to your foam, but also a lovely Fruity Taste, which will help your drinks stand out and give your customers a great experience!
