Who are Boiron?

Boiron Purée is brand new to us here at Drinkstuff. However Boiron are very well known in the catering industry, especially amongst chefs. Their frozen purée range is one of the most used purée brands in a European kitchen environment when it comes to desserts, however over the past few years, Boiron have realised that they are missing out on the Bar industry, so here in the UK, they are now launching an Ambient version of their esteemed frozen product.

 

What makes Boiron different to any other purée brand?

Boiron is one of the only 100% fruit purée* brands on the Market. Most other brands max out at 90% fruit and the other 10% is made of sugar. That would be the likes of Funkin and Bristol purée for example. You even have ODK purée which is an 80% fruit puree, with the other 20% being grape juice as the stabiliser.

You see most brands simply don’t have the technology to produce a 100% fruit puree product, because it will need something to stabilise it. However, Boiron have spent a fortune on their "flash pasteurisation" techniques and patented them, meaning no one else can really copy them.

This flash pasteurisation technique ensures the purée can remain long life and shelf stable in a carton and then once you open it, it will taste as fresh as the day as the fruit was picked off a tree.

 

How else does Boiron stand out?

The quality of Fruit! Every brand will tell you how their fruit is exceptional, but Boiron have spent decades building relationships with farmers all around the world to guarantee the best possible Fruits. For example, Boiron's Mango comes directly from India and is one of the best varieties of Mango available, the Totapuri Mango, very highly regarded in the Juice industry. Passion Fruit‘s are Flavicarpa Passion Fruits and sourced from Ecuador. Strawberries are sourced from south east Poland. White Peaches sourced from the Loire Valley. And the raspberries come from Serbia, again widely regarded as some of the best raspberries in the world.

 

Let's also look at package size.

Boiron comes in a Litre carton. Whereas Funkin for example is a Kilo. Now a kilo of Water is near enough 1000ml. However, a Kilo of Puree can be circa 800ml. Sometimes less. So with Boiron, you also get a lot more product for you money!

What flavours do we currently have in their ambient range?

At launch with Drinkstuff there are currently five different Fruits available;

  • Passion Fruit
  • Mango
  • Raspberry
  • Pineapple
  • White Peach

This will be updated in April 2025 with another 4 flavours joining the range.

 

Who is Boiron purée for?

Boiron purée is a long life and shelf stable puree. It will have 18 months on it after product creation. But like most purée brands, they do recommend once opened, keep chilled in a fridge and use within 10 days.

Now to a lot of bars this may not be suitable. Some bars might prefer more of the fruity mix variety of purée which are 50% fruit to 50% sugar and are long life and shelf stable even after opening. But for those bars that love to use fresh fruits, but want guaranteed consistency of flavour, then Boiron is definitely the answer.

 

 

 

I made this video for my own personal YouTube channel a few months ago, showcasing the differences between most brands on the market. Drinkstuff currently sells most of them. Remember this is my own personal point of view, NOT Drinkstuff, but I thought it might be helpful viewing, because even for my own Business, while I will be swapping to Boiron from Funkin, I will still also be using Monin syrups and Réal. But this video should be pretty neutral and helpful viewing and explain the differences between different product types.

 

*Note while I do say 100%, there are currently 2 products that are actually 99.8% Fruit and 0.2% Lemon Concentrate and a merest hint of colour. But importantly, absolutely no sugar to stabilise.
