Featuring daring and rare new flavours, this Paragon Cordial has been created using three techniques: infusion, alcoholate (distillation) and supercritical CO2 extraction. By using these methods and the addition of gluconic acid the cordial feature a unique flavour profile that captures the essence of the Berry creating powerful and complex drinks.
The volcanic soils of Penja give the white pepper its fresh aromas of menthol and camphor. Crack it roughly to release it's long-lasting flavour.
With notes of tart citrus notes and assertive white pepper spice this cordial is perfect for adding a unique and interesting drink to your menu.

Ingredients
15ml Paragon White Penja Pepper Cordial
5ml MONIN Honey Syrup
40ml White Cuban Rum?
10ml Lime Juice?
Top Brut Champagne
Method
Pour all ingredients except the Champagne into a shaker filled with ice cubes.
Shake and Strain into a highball glass over a spear of ice.
Top with Champagne and garnish with a lime peel.?

White Penja Negroni
We use this to make a white penja negroni and it’s delicious- perfect for summer. The cordial is an essential part as you only use a little but it changes the flavour and texture of the drink. Found this cordial to be spot on.
