The Pornstar Martini, created in 2002, still goes from strength to strength. It's creator, Douglas Ankrah, created the cocktail in his Townhouse Bar, but arguably, the industry probably associates the Pornstar Martini with his other Bar, LAB.
Doug sadly passed away in Summer of 2021, just a few weeks before it's 19th Birthday, But we know he's looking down, immensely proud that his legacy lives on into its 23rd year!
The Pornstar Martini wasn't an instant hit though, well certainly not to those that worked outside of London. I remember the Cocktail didn't make it on to my own Cocktail Menu in Cambridge until 2008. And even then, that's only because I consumed every bit of Trade press going, so I knew about the Cocktail vicariously.
In fact, it wasn't until 2012-2013 when the Cocktail began to grow nationwide, to the point where in 2016, it officially became the UKs biggest selling Cocktail.
There are a few brands & products that you could argue only really exist because of the Cocktail too.
Funkin have everything to thank the Pornstar for. Passion Fruit is by far and away their biggest Puree SKU, and it's hard to think of any other Cocktail where Puree is required to that extent. Strawberry maybe, but the Strawberry Daiquiri by comparison is tiny. I still find it amusing that Strawberry and Peach were Funkin's first 2 flavours.
Absolut too can count themselves lucky. While Cariel (a brand I'm guessing 99% of you will have never heard off) was the original choice, Absolut Vanilia's popularity, because of ease to purchase, exploded. In fact, even to most of the trade, the only real competition to Absolut was Stoli Vanil, but for the home consumer, you certainly weren't buying that in your local supermarket.
And then, lets think about Vanilla Syrup sales too. Yes, to Coffee Shops that were growing in popularity by the late 2000s, Vanilla Lattes were in the ascendancy, But to the Bar industry, you certainly had little to no use for a Vanilla Syrup. Now to the likes of Monin, Vanilla is right up there as one of their biggest sellers. And you have to think, to us back in the early 00s outside of London and other major cities, the ONLY way you were getting Vanilla Sugar in your drinks was by chopping up vanilla pods and mixing with Caster Sugar!
I've opted to use a Premium Vanilla Vodka in my recipe. My reasoning, simply because if I want the best tasting cocktail, I need to use the best tasting Vodka. And while it's a personal choice, for me, It has to be Dutch Barn Balinese Vanilla Vodka. However, obviously if you use a cheaper Vodka, you could make the cost price of this Cocktail some 60p cheaper.
My Recipe;
👉 45ml Dutch Barn Vanilla
👉 15ml Monin Vanilla Syrup
👉 30ml Boiron Passion Fruit Puree
👉 15ml Boiron Lime Juice
Served up in an Back to the 20's Hemingway Martini Glass
and garnished with a Frona Dried Passion Fruit slice.

- 15ml Sugar Syrup
- 60ml Reposado Tequila
- 15ml Orange Curacao
- 20ml Boiron Passion Fruit
- 30ml Boiron Lime Juice
- 10ml Agave Syrup
- 45ml London Dry Gin
- 20ml Boiron Passion Fruit
- 15ml Bristol Yuzu Sherbet
- Fever Tree Sicilian Lemonade - instead of Soda
- 60ml Dark Rum
- 20ml Boiron Passion Fruit
- 10ml Bristol Raspberry Shrub
- 10ml Bristol Disco Grenadine (Raspberry & Pommy)
- 20ml Boiron Lemon Juice
- 60ml Irish Whiskey
- 20ml Boiron Passion Fruit
- 15ml Bristol Demerara Syrup
- 20ml Boiron Lemon Juice
- 1 dash Aromatic Bitters
- 6 drops Stillabunt Foamers
